Have you ever used the wrong glass at a formal dinner, or accidentally grabbed your neighbour’s napkin? Join fellow UBC Sauder alumni and explore the nuances of the art of dining well at the Vancouver Club with resident etiquette expert, Tim Ellison.

Enjoy a gourmet three-course meal crafted by Executive Director of Culinary for The Vancouver Club, Ned Bell, paired with carefully selected wines. During dinner, you’ll be led through key dining etiquette lessons by resident etiquette expert Tim Ellison, including:

  • Understanding your table setting
  • Mastering difficult to eat foods
  • How to handle conversation topics and conduct business

Understand the dining behaviours that are expected from a professional in today’s business world. Whether you want to get comfortable with fine dining, or simply refresh your etiquette, join us for an excellent meal and impress the next time you go out for dinner!

Tickets:

$60 CAD, includes a three-course meal, two wine pairings and a glass of Prosecco.

Menu:

Welcome glass of Prosecco and two wine pairings

Appetizer:

Roasted Beet & Burrata Salad: carrot, pumpkin seed crumble, fig balsamic vinaigrette

Choice of Entrée:

  • Butternut Squash Risotto: crispy sage, hazelnuts
  • Thyme Roasted Organic Chicken Breast: sweet potato & parsnip ‘rosti’, broccoli rabe, stock reduction, pink peppercorns
  • Pan Seared Wild BC Salmon: asparagus risotto, summer squash, lemon emulsion

Dessert:

Mascarpone Cheesecake: pistachio crunch, honey roasted pears, pear chip, pistachio snow

Ned Bell is a chef advocate, keynote speaker, educator and founder of Chefs for Oceans. Bell’s interests and talents have led him to his current role as Executive Director of Culinary for The Vancouver Club, Ocean Wise Executive Chef, Chef Ambassador for International Year of the Salmon, and author of bestseller – Lure: Sustainable Seafood Recipes from the West Coast.

Tim Ellison is an educator, leader, and sommelier, who will generously share his vast knowledge and tales from the industry. Tim holds a Bachelor of Hospitality Management from BCIT, certification as a Chef de Cuisine from the Canadian Culinary Institute, sommelier certification from the International Sommelier Guild and Level Three Assessor status from the Wine and Spirit Education Trust.
 
He has travelled the world exploring wine regions, representing Canadian food and beverage producers and engaging in public speaking, extolling the virtues of gracious hospitality and a service driven attitude.
